Breakfast is definitely the meal I struggle with the most. I leave my house to go to work really early and in that time I have to get myself ready as well as my youngest son. Trying to get a 3 year old up and out of the house is no easy task, especially at that time of the morning. Cooking myself a meal is the last thing on my mind. I find myself planning different things for breakfast but I usually end up skipping it altogether. After years of searching I really haven't found a grab and go option I am happy with. I have tried so many different options. I have made egg bites and muffins and egg sandwiches nothing seemed to stick.
Lately I have found a new breakfast that I can grab and go. I have been making overnight oats. This isn't something new, not for me any way, but it is something I have been doing and have been able to be consistent with. One of the reasons I backed away from this option in the passed it because of how high it was in carbs. Lately I have shifted my thinking on hitting my macros and I have been eating a ton more fruits and vegetables. This has actually freed up so many carbs for me which made overnight oats a great addition to my day. There are so many different variations to overnight oats but I want to share what I have been making with you!
Ingredients for base
1/3 cup oats
1/3 cup unsweetened almond milk
1/2 tsp vanilla
1 tbsp cashew butter
After this is all mixed in I add different toppings. Here are some of my favorites!
* Strawberries
* Apples and cinnamon
* Unsweetened coconut flakes and raspberries
* Raspberries and blueberries
* Sliced almonds and Mango
* Tbsp mini chocolate chips and banana (I add the banana in the morning because I have issues with banana textures lol)
Overnight oats have been perfect for me. I mix it all in a mason jar and it is ready to grab in the morning. This gives me the option to eat when I get to work and there is no morning prep! Eating breakfast has also been a game changer for me. I have noticed that I am consuming less calories at lunch because I am still content from breakfast! I'd love to hear what you try!
