Rosemary Carrots




I don't know about you but I am always looking for quick easy sides to go with dinners. My two boys happen to be pretty good eaters and will for the most part eat anything we put in front of them. We spend a lot of time discussing healthy options and why we need vegetables at our meals. Their go to vegetable is definitely carrots. They eat them raw or cooked and never give me any issues, asparagus now that's another story!


This is a recipe I consider kid friendly, well because my kids eat it up and it is super simple to add into any dinner.




Ingredients

* 1 TBSP olive oil

* Carrots - about 500 grams (2 very large carrots will do it)

* 2 TSP Dried Rosemary

* Salt and Pepper to liking


Preheat oven to 400°F


1- Peel the carrots and cut off the ends.

2- You can cut up the carrots any way you wish. I like to cut them in rounds but making little carrot sticks works just fine as well.

3- Place carrots in large bowl and toss with olive oil, rosemary, salt, and pepper. For the rosemary I like to crush it a little before adding it to the bowl.

4- Put on a baking sheet

5- Put in oven for about 20-25 minutes
